Citric Acid Anhydrous vs Monohydrate

Citric Acid (E330) is sold in two forms — anhydrous and monohydrate. Both are identical chemically once dissolved, but their handling differs.

Anhydrous is preferred for dry-blend applications (effervescent tablets, powdered drinks, seasoning blends) where moisture is the enemy. Monohydrate is preferred for liquid acidification.
